To spitchcock is to take a fresh eel, split it along its back and cut into it pieces, and then to grill, broil or fry it.
In Western cooking, it is often also coated in breadcrumbs and herbs.
In Japanese cooking, it is called “kabayaki” and coated with a sweet sauce.
Not the same as spatchcock.
