A plate garnish, to accompany meat, consisting of potatoes, cauliflower, and lettuce.

- Peel and cook potatoes and mash them. Pipe the potato onto a greased baking tray to make cases;
- Cook cauliflower, drain, then purée, then press to remove any remaining moisture;
- Season with salt, pepper, nutmeg;
- Put into the potato cases;
- Brown under grill;
- Top with lettuce.
Served with veal gravy.
